Both our restaurant and our cuisine have rich histories... Our restaurant was built in 1887 and was originally a Christian church. It is a historically protected building and cherished by the city of Trinidad. Frank Cordova, Owner, was born and raised in beautiful Trinidad, Colorado. In his early twenties, he and his brother Bob ventured to Hollywood, California to make it big in the music industry. With the entrance of a new found hope in something far greater, and the beginning of growing families, a change of focus came about. When Bob decided to move to Las Vegas and support a family-owned Italian restaurant, an idea sprung forth that the music dream could still be realized for the two brothers, in a singing-waiter setting. Bob called Frank, and he jumped at the offer. Frank moved his family to Las Vegas in 1979. The idea was a huge success and they are known as the "ORIGINAL" singing waiters of Las Vegas.
