Chicken Soup– The Remedy

Chicken Soup.photo-thekosherchannel.comMy three girls recently came down with a nasty cold and had no appetite for food nor drink.

At that time I remembered that my mom and my grandmother always used to say “feed the cold and starve the fever” and that chicken soup is the key.

I have heard in other circles as well that a steaming hot bowl of chicken soup can cure practically any illness.  I decided to follow their advice and cook up some good chicken soup.

Here is what you need:

5 to 6 lbs of seasoned chicken parts of your choice (wings, drumsticks, back and neck – cut up)

4 large onions (peeled and quartered)

5 stalks of celery

10 medium-sized carrots

2 large sweet potatoes (peeled and quartered)

3 large white potatoes (peeled and quartered)

Some parsley and thyme

Salt and pepper to taste

2 large green pepper

Place seasoned cut chicken parts into soup pot with water and bring to a boil. Add the carrots, potatoes, and onions then let the pot simmer for a good hour and a half. Then add the celery and other ingredients and let the soup cook for another half hour.

Remove the chicken bones. Some people prefer to let the pot cook until the vegetables almost disintegrate and others prefer to remove the vegetables with a little of the broth, puree it then stir it back into the soup.  Either way, serve hot.

Although chicken soup is not really the cure for a cold, it tastes good, will keep the gas away and keep you hydrated!

Chicken soup cures nothing. By the way no one in Antigua dies of a common cold. Take American folk myth and scram.
