Cheese Stuffed Potatoes

Cheese Stuffed PotatoesIf you are a working mom like me, I am sure you are constantly searching for ways and means to prepare delicious, nutritious meals in quick time.  Some recipes, like this one, can be partially prepared and stored until you are actually ready for it.


Potatoes are known for being rich in carbohydrates and calories, and depending on what you place with this vegetable; your daily required nutritional needs can easily be met.

For the Cheese-stuffed potato dish, you will need;

* 6 baking potatoes
* Corn or soya bean oil
* 3 tablespoons butter or margarine
* ¼ cup chopped onion
* 2 teaspoon original Worcestershire sauce
* ½ teaspoon slat
* ¾ cup shredded sharp cheddar cheese
* Paprika (if you wish)


Brush the potatoes lightly with oil and place them on a baking sheet.

Bake in preheated 400° F oven until potatoes are tender (approximately 1 hour).

Cut potatoes in half lengthwise and scoop out potato from skin.

Mash potato with butter, onion, Worcestershire sauce and salt.

Spoon mashed potato mixture into potato shells and top with cheese.

Return to hot oven and bake until cheese melts (about 15 minutes).

Sprinkle with paprika or other topping or seasoning and serve.
